Recipe: Healthy Chicken Maryland

Original recipe makes 4 Servings


  • 4 portions Export Meat Warehouse Crumbed Chicken Maryland
  • 8 Thin Pineapple rings; Drained
  • 2 Medium Bananas; Peeled and halved
  • 6 medium Potatoes; Peeled, halved, boiled 10 mins
  • 1/4 cup Extra virgin olive oil


Place Marylands on a tray lined with baking paper. Brush the potatoes with olive oil and place on the tray with the chicken pieces. Do the same with the banana halves on a separate tray. Place the uncrumbed, drained pineapple slices on the tray with the banana.

Preheat oven to 180 degrees, fan forced. Drizzle the olive oil that is left over the chicken pieces and banana pieces.


Place chicken and potatoes in oven and bake for 1 hour or until tender and golden brown. After the chicken has been cooking for 40 minutes, add the banana and pineapple to the oven and cook for 20 minutes.

Serve the pineapple and banana on top of the chicken, add a green vegetable, such as peas or beans and a chicken gravy to complete the meal.


To ensure that the chicken is cooked, insert a skewer into a meaty part. Clear juices, not red, should run out if it is done.
