The Secret to Perfectly Cooked Chicken Schnitzel
Chicken Schnitzel is that warm comfort food at the end of a long day, it’s an easy meal to throw together at a moment’s notice that still makes you look like a star in the kitchen. It’s something that people of all ages appreciate – you can serve it up to kids with mashed potatoes, and adults with a side salad.
This is an all-round meal that’s sure to be a winner.

Makes: 2 servings
- Crumbed Chicken Schnitzel from your Local Butcher, Export Meat Warehouse.
- Olive Oil to cook
- Take crumbed chicken schnitzel from the fridge
- Add a lug of olive oil to a fry pan and turn the heat to high.
- Wait for the oil to start sizzling before you put the chicken into the pan.
- Cook 3-4 minutes on each side, until the meat is cooked through.
A common mistake when cooking Chicken Schnitzel is to leave it on the pan for too long at a low heat – this is where it can get too tough. If you want a really nicely cooked schnitzel, don’t overcook it, just cook enough to make sure the meat isn’t pink (undercooked chicken isn’t good for you) and then remove it from the pan. You really need to stay with it because the secret to perfectly cooked schnitzel is high heat and quick timing. If you notice it going dry, add a little more olive oil to the pan.
It is the olive oil which gives the schnitzel that beautiful golden colour. Don’t leave it on too long, or you risk burning the crumbs or overcooking your chicken and ruining the meal.
Serve with a salad or in the old-fashioned way with mashed potatoes.
