Recipe: Mini Burgers

Suitable for toddlers and up, this is a great recipe for that quick, easy and healthy summer lunch or dinner.

Serves 4-6

Ingredients

  • 500g lean beef or lamb mince
  • 1 onion, peeled and chopped
  • 1 egg
  • 1 cup soft breadcrumbs
  • 1 tsp mixed herbs or 1 Tbsp chopped fresh herbs (optional)
  • 1 Tbsp canola or sunflower oil
  • 1 tomato
  • lettuce
  • ½ cup grated carrot
  • Small soft rolls, split

Method

Mix first five ingredients together in a small bowl. Combine well and shape into small meat patties, toss lightly in plain flour.

Heat the oil in a frying pan on a medium heat and cook patties for approximately 15 minutes or until no longer pink inside.

Place on a soft roll with tomato, lettuce and grated carrot.
